1 cup ndengu (green grams), boiled
1 onion, chopped
2 tomatoes, blended or chopped
2 cloves garlic, crushed
1 tsp ginger (optional)
1 tsp Royco curry spice
Salt to taste
2 tbsp cooking oil
Coriander for garnish
Heat oil and sauté onions until golden.
Add garlic, ginger, and cook briefly.
Add tomatoes and cook until thick.
Add Royco curry spice and stir.
Add boiled ndengu and mix well.
Add ½ cup water and simmer for 5–7 minutes.
Garnish with coriander.
Perfect with: Rice, chapati, or ugali.
1 cup boiled ndengu
1 medium onion
2 tomatoes
1 tsp turmeric
1 tsp curry powder
1 cup coconut milk
1 tsp Royco or salt
Oil for frying
Fresh coriander
Fry onions until soft.
Add tomatoes and spices (turmeric + curry).
Cook until a thick paste forms.
Add boiled ndengu and mix.
Pour in coconut milk.
Simmer for 10 minutes on low heat.
Add coriander.
Result: Thick, creamy, slightly sweet curry with rich flavour.

½ cup peas (optional)
1 onion

Add carrots and green pepper, stir for 3 mins.
Add tomatoes and cook into a sauce.
Add boiled ndengu, peas, and Royco spice.
Add little water and simmer for 5 minutes.
Garnish with coriander.
