3. Select the appropriate grit level based on your sharpening needs. Coarser grits are suitable for repairing and reshaping the blade, while finer grits are used for honing and polishing.
4. Hold the knife firmly with one hand, ensuring a secure grip and maintaining a consistent angle for sharpening. The angle can vary depending on the type of knife and its intended use, but a common angle is around 20 degrees.
5. Using light pressure, slide the knife blade along the stone in a sweeping motion, following the blade's bevel. Maintain a consistent angle and apply even pressure along the entire length of the blade. Repeat this process several times on each side of the blade.
6. For double-beveled knives, such as chef's knives, it's essential to maintain the same angle on both sides of the blade to achieve an even edge.
7. Once you have sharpened the blade with a coarser grit, you can progress to finer grits to refine the edge. Repeat the sharpening process using the finer grit stone, following the same technique.
