Directions
Rehydrate for 20-25 minutes in 10 times its weight of sugared water or a mixture of one-third must and two-thirds water at 38-40°C (100-104°F), stirring during rehydration. Slowly sprinkle the rehydrated yeast into 3 times the weight of the must, wait 10 minutes, then add to the fermentation tank with uniform mixing. The temperature difference between the rehydrated yeast and the tank should not exceed 10°C, ideally 5°C.
