Ceylon cinnamon, also known as "true cinnamon" (Cinnamomum verum), is a premium spice native to Sri Lanka. It is distinguished from common Cassia cinnamon by its delicate, sweet flavor, lighter color and significantly lower levels of coumarin, making it safer for regular consumption.

Unlike Cassia cinnamon, it contains only trace amounts of coumarin. Ceylon sticks are made of many thin, papery layers rolled like a cigar and are easily crumbled by hand
