Pilau Recipe (Serves 4)

Ingredients:

  • 2 cups Mwea Pishori rice

  • 4 cardamom pods

  • Salt to taste

Instructions:

  1. Prepare the Meat: In a large pot, heat oil and sauté the onions until golden brown. Add garlic, ginger, cumin seeds, cinnamon sticks, and cardamom pods, stirring until fragrant.
  2. Add Meat and Spices: Add the diced meat and cook until browned. Add the chopped tomatoes and cook until the tomatoes soften. Sprinkle pilau masala and salt over the mixture.
  3. Add Rice: Rinse the rice under cold water and drain well. Add the rice to the pot and stir to coat it with the spices and meat.
  4. Add Broth: Pour in the broth (or water) and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff and Serve: Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and serve with kachumbari (tomato salad) or your favorite side dish.
