- 1-inch piece of ginger, grated
- 1 tablespoon pilau masala (spice blend)
- 1 teaspoon cumin seeds
- 4 cardamom pods
- 2 cinnamon sticks
- 3 tomatoes, chopped
- 4 cups beef or chicken broth (or water)
- 3 tablespoons vegetable oil
- Salt to taste
Instructions:
- Prepare the Meat: In a large pot, heat oil and sauté the onions until golden brown. Add garlic, ginger, cumin seeds, cinnamon sticks, and cardamom pods, stirring until fragrant.
- Add Meat and Spices: Add the diced meat and cook until browned. Add the chopped tomatoes and cook until the tomatoes soften. Sprinkle pilau masala and salt over the mixture.

Tips for Cooking Mwea Pishori Rice
- Rinse Thoroughly: Rinse the rice under cold water to remove excess starch and prevent stickiness.
- Measure Water Carefully: Use a 1:2 rice-to-water ratio for perfectly fluffy rice.
- Use Broth for Extra Flavor: When making pilau or other flavored rice dishes, substitute water with beef or chicken broth for richer taste.
- Cook on Low Heat: Once the rice starts boiling, reduce the heat to low to allow the grains to cook evenly.
- Let It Sit: After cooking, allow the rice to sit covered for 5-10 minutes to ensure all the moisture is absorbed and the rice remains fluffy.
- Add Aromatics: Enhance the aroma and flavor by adding whole spices like cloves, cinnamon sticks, and cardamom pods during cooking.
- Avoid Stirring: Once you’ve added water or broth, avoid stirring the rice to prevent breaking the grains.
- Store Properly: Keep your Mwea Pishori rice in an airtight container to maintain its freshness and aroma.
