Pilau Recipe

Ingredients:

  • 2 cups Mwea Pishori rice
  • 500g beef or chicken (cubed)
  • 2 large onions (finely sliced)
  • 4 cloves garlic (minced)
  • 1-inch ginger (minced)
  • 2 tomatoes (chopped)
  • 4 tablespoons cooking oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 bay leaf
  • Salt to taste
  • 4 cups water or beef broth

Instructions:

  1. Rinse Rice: Rinse the Mwea Pishori rice under cold water and soak for 20 minutes.
  2. Sauté Onions: In a large pot, heat the oil or ghee and sauté the onions until golden brown.
  3. Add Garlic & Ginger: Stir in the minced garlic and ginger, and cook for 2 minutes until fragrant.
  4. Add Spices: Add cumin seeds, coriander, ground cumin, black pepper, cinnamon, cardamom, cloves, and bay leaf. Cook for 1 minute to release the aroma.
  5. Cook Meat: Add the cubed beef or chicken and cook until browned on all sides.
  6. Add Tomatoes: Stir in the chopped tomatoes and cook until soft and blended with the meat and spices.
  7. Add Rice: Drain the soaked rice and add it to the pot. Stir well to coat the rice with the spices and meat mixture.
  8. Add Water or Broth: Pour in the water or broth, season with salt, and bring to a boil.
  9. Simmer: Lower the heat to a simmer, cover the pot, and let the rice cook for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
  10. Serve: Fluff the rice with a fork and serve hot with a side of kachumbari (tomato salad) or a vegetable stew.
