DELICIOUS, EASY TO FOLLOW RECIPES 

 

  1. Traditional Kenyan Chicken Pilau

Ingredients:

2 cups Mwea Pishori rice

500g chicken (cut into pieces)

2 large onions (thinly sliced)

3 tomatoes (chopped)

3 garlic cloves (crushed)

1 tbsp ginger (grated)

3 tbsp pilau masala

3 cups hot water or chicken broth

Cooking oil

Salt to taste

Instructions:

Heat oil in a sufuria and fry onions until deep golden brown.

Add garlic, ginger, and pilau masala; fry 1 minute.

Add chicken and cook until browned.

Add tomatoes and cook until they form a thick sauce.

Pour in the rice and stir to coat with spices.

Add hot water/broth and salt; bring to a boil.

Cover and cook on low heat for 15–18 minutes.

Fluff gently and serve with kachumbari.

Result: Rich, aromatic, deeply seasoned pilau using the fragrant qualities of Pishori rice.

 

2. Quick Vegetable Fried Rice

Ingredients:

3 cups cooked Mwea Pishori rice (preferably day-old)

2 eggs (optional)

1 cup assorted vegetables (peas, carrots, onions, capsicum, sweet corn)

2 tbsp soy sauce

2 tbsp cooking oil

1 tsp garlic (minced)

Salt & pepper to taste

Instructions:

Heat oil in a wide pan. Scramble eggs lightly if using; set aside.

Add garlic and vegetables; stir-fry 2–3 minutes.

Add cooked rice and mix gently.

Add soy sauce, salt, and pepper.

Fold in the eggs and continue stir-frying for 2 minutes.

Serve hot.

Result: Fast, colourful, flavourful meal—great for kids, lunchboxes, or weeknight dinners.
