Caster Sugar is often used in baking cookies, cakes, cupcakes and muffins. This is because of its light texture and stability to dissolve easily. It is rarely used raw. It refers to a sugar that is ground to a consistency that is granulated and powdered sugar. Caster sugar is obtained from sugar cane or sugar beet, and is valued for its quick-dissolving properties. The usual refined white variety of caster sugar will have to be treated to remove molasses, and so will be free flowing.
It is not for I icing, frosting or buttercream.
